A thick pork chop for lunch on an unusually warm Saturday? Strange, yes. But tasty. The Missus cooked this up Wednesday night — before I realized I had to work through dinner, so she ate hers alone and put mine in the fridge. I would much rather have eaten this straight from the oven, but the reheated version wasn’t bad either. Also: Couscous with brussel sprouts, tomatoes and zucchini.
This Missus whipped up a pretty fantastic pork chop dinner in a matter of minutes. I mean, one moment she was on the couch watching “Sister Act,” and the next moment we’re cutting into a juicy piece of pork with couscous and brussel sprouts on the side. Thanks, Whoopi Goldberg.
I’ve never had a pork chop like this before — smoked. It was like a big, thick piece of bacon. Put some ranch dressing on my baked potato and it was a meal fit for a midwesterner. The grilled asparagus and zucchini and the great northern beans in a tomato sauce brought the meal a bit closer to Planet Fancy. I think the Missus was just showing off her cooking skills to a friend who dropped by for dinner, but who am I to complain?
One of the best pork chops I’ve ever had, along with broccoli and mashed sweet potatoes and a piece of focaccia. I’ve been needing a meal like this for a while.
